Baked Eggplant with Cheese and Anchovy, a/k/a Sicilian Eggplant Parmigiana.
Sitting around waiting to see Pilobius perform at Prospect Park tonight, as part of Celebrate Brooklyn, I decided to take a leap, and cook a Sicilian version of Eggplant Parmigiana, called “Baked Eggplant with Cheese and Anchovy.” I followed a David Tanis recipe, featured in Wednesday’s New York Times Food Section. His specific recipe title calls for Ricotta and Mozzarella, but since this is Cooking the Kitchen, which involves cooking what is in the fridge, I have substituted some Bulgarian Feta Cheese, and Parmesan. I also cut back on the servings of his original recipe, and made a meal for 2 instead of 6 to 8, using only one eggplant.
Because it is spring, I bought four artichokes, when I food shopped at the Park Slope Food Coop this past Thursday….

We have hosted Thanksgiving for many years now. I always cook yams on this holiday, and the meal is always served on the parlor floor, despite the kitchen being located on the garden level of the house. We live in a three story wood frame house from the 1890’s, and occupy a sort of duplex consisting of the garden and parlor floors. In the past, we rented out the top floor apartment. At present, our son and his girlfriend live in the top floor apartment and help with some of the house expenses. It is a treat for us to have them there, as we age. They stop in and we share a meal, or we watch a tv show together. It feels good to have them physically close….
